The thirteen desserts
Typical of Provence, the thirteen desserts symbolize the dinner guests of the Last Supper. The table consists of following products:
-The four beggars (dried fruits of which the dark colour remind that of the dresses of the orders of the beggars)
-Seasonal fruits: the grape, the prunes, the apples or the pears
-The fruits of Africa with regard to the Kings Witches: dates, mandarins
-The white nougat (hazelnuts, cogs and pistachio nuts) and black nougat (honey)
-Candied fruits
-Calissons (lozenge-shaped sweet made of ground almonds)
-The pump with oil to wipe the liqueur wine
The pump with oil is a festive bread prepared for base of flour, yeast, sugar, soft brown sugar and flavoured with peel of orange and lemon, dough to which one adds the olive oil.

The bubble of champagne
Created according to the legend by Rémus, twin brother of Romulus founder of Rome, Reims, where Clovis was baptized, became the city of the coronation of the kings of France. If the Roman introduced the vineyard in Champagne, it is only at the XVII-th century that the monk Dom Pérignon mastered natural effervescence and assembled vineyards and vines. Champagne became then the wine of the kings and the elite.
But nowadays, no successful parties without Champagne!
Even though this delicious drink considerably became more democratic it deserves all your respect at the time of serving it. One considers generally that the champagne is better iced (very freshly) but not frozen.
At the time of uncorking a bottle, the purists suggest to collect the cork in the hand rather than to let it cross the room or to strike the ceiling with loud noise!
Also the flared cup of champagne is less suited than the flute. This one allows preserving bubbles much longer.
Anyway, choose champagne which pleases you and enjoy discovering very accessible champagnes and to the less known names and nevertheless great...

The Christmas tree
In the 11-th century, one presented scenes that called Mysteries, of which that of the Paradise very popular during the Advent. Stocked with apples, a spruce symbolized then the tree of the paradise. During the 15-th century, the people began to install it in the house on December 24. However, the first spruce such as we know it, but without light still, would have appeared in Alsace in 1521. In 1841, the Prince Albert (native of Germany), husband of the queen Victoria, drew up a Christmas tree to Windsor's castle, in England.
Of the yard, the fashion of the spruce spread quickly at the bourgeoisie and propagated then at common people. At the time a spruce had to have six heights of branches and be put on a table covered with a tablecloth of white damask. One it appears of festoons, sweet boxes and paper flower.
The different elements being of use to the ornamentation were at first conceived at home before being produced in industry. In the middle of the 17-th century, the illumination of the spruce made by means of small candles. They will be replaced, at the beginning of the 20-th century, by electric light bulbs. The other variants, such as the outside and artificial spruces, will appear to the bend of the 20-th century.

The colours of Christmas
The traditional colours of Christmas are naturally the red, the colour of heat and light, and the green, evoking the colour of the foliages and the hope, bridegrooms in the gold of the sun.
Whatever is the colour chosen to decorate the house and the table of Christmas; it is important to choose a subject as his decoration.
For the occasion one privileges beautiful materials: the crystal, the brockets, the organdie, the tulle, but you can opt for rural tissues and natural materials: the linen, the white canvas, ears of wheat or small straw bundles of sticks placed by side of every dinner guest.
To prepare the table of Christmas, it is the custom of Provence to present three superimposed white tablecloths of different sizes. The next day, for morning, it is necessary to keep one of the white tablecloths and to cover it with a red tablecloth retained with four knots. For the lunch of Christmas, one keeps the biggest white tablecloth which one covers with another tablecloth embroidered with motives in the gold-coloured thread.
Once your most beautiful crockery arranged, table centre-pieces will be able to be made with boughs, fruits or flowers and distributed. Beautiful candles will complete the decoration of the table and will get a lighting which counts a lot in the atmosphere of Christmas.
