- The lavender
The department of Vaucluse, and mainly the plateau of Sault, is the first French producer of lavender, with a surface of 1150 hectares of lavender and 1750 hectares of lavandin, providing 40 % of the French production of essence of lavenders.

- The Honey of lavender
Due to the area of the fields of lavender, the Country of Sault counts numerous beekeepers who commercialize their product with names of family or names of places.
The honey of lavender is aromatic, delicate, its clear tint going from the white ivory in the yellow.
- The lamb of the Country of Sault
Fed under the mother by a milk very rich in nourishing elements and in different aromas (thyme, savory, wild thyme) then, from the weaning, by a learned mixture of cereal (barley, oat and triticale) produced in the farm, it’s looked for by the consumers who appreciate the very fine texture of the meat and the incomparable natural savour.
- The nougat of Sault
Make with honey of lavender, harvested on the hillsides of the Giant of Provence and almonds of regional production, it is authentic nougat which is proposed to the gourmets.
Smooth, blown out, very soft white nougat, and the black, delicately caramelized, are two candies which gustative qualities did not vary for a century.
- The small « epeautre »
Today the «Gallic’s Wheat " is cultivated on plateau of Sault where the harvest takes place in August. The treatment of the grain comes along with a delicate stage of shelling. The soup of “épeautre” is a culinary tradition of the country of Sault.
- The pig of the Mont Ventoux breed outdoors
Due to a food exclusively consisted of cereal and legumes and in a protected and natural environment, it produces a delicious meat. The climate and the know-how of the autochthons made the fame of its cooked pork meats for more than a century.
- Goat cheeses
Fed through the hills of the Country of Sault, which it crosses quite freely, goat supplies generously a milk perfumed with all the grasslands and the wild aromatic plants which constitute the main thing of its food, and delicate savours which we taste in the cheese.
- Macaroons of Sault
Elaborated with the ancestral tradition, these incomparable macaroons in the almonds of Provence delight the finest palates. Their soft, sweet consistency, doubled by a delicately bitter taste, is appreciated by the amateurs.
- The aromatic plants
Most are cultivate by men, and many grow naturally on the hillsides of hills and in country of Sault.
Since 1515, this market takes place in the village everything on Wednesday mornings.
