There is no single drink in Luberon whose quality is better than Pastis. This is a liquor whose flavor is from aniseed. Its invention dates back to 1932 in Marseille, with Paul Richard leading the team that invented it. Its appearance is appealing since it has an amber color, but once a user adds water, the drink turns milky-white. It is a favorite pre-lunch drink for many.
Daube
Though this dish is considered to be poor man’s meal, this beef stew is a huge favorite of many residents, more so during the winter season. The beef is perfectly braised in a mixture of red wine, garlic, herbs, and vegetables. It is served with gnocchi or polenta, whichever the user prefers.

Aioli
The very basic form of aioli is just a blend of garlic mayonnaise. However, the original aioli does not have eggs as part of the components. You might argue that the dish is very basic and does not add to the allure of Luberon. However, wait until it is served to you. The shellfish, potatoes, and mound of vegetables are perfectly dunked in it. Since time immemorial, aioli is always served on Fridays.
